CardiOatmeal Cookies
These decadent treats offset their rich ingredients with cardio-friendly fermented beet, oatmeal, and flax. They’re heart to beet!
Ingredients
• 1 cup (120 g) all-purpose flour
• ½ tsp (3 g) baking soda
• ½ tsp (5 g) salt
• ⅓ cup (80 ml) unsalted butter (at room temperature)
• ⅓ cup (80 ml) organic cane sugar
• ⅔ cup (160 ml) light-brown sugar, packed
• 2 tsp. (10 ml) pure vanilla extract
• 1 large egg
• 1½ cups (355 ml) rolled oats
• 1 cup (250 ml) semisweet chocolate chips
• 1 tbsp. (15 ml) New Roots Herbal Fermented Beet Powder
• 1 tbsp. (15 ml) ground flax
Instructions
1. In a medium bowl, whisk together flour, flax, fermented beet powder, and baking soda.
2. Combine the butter with both sugars; beat on medium speed until light and fluffy.
3. Reduce speed to low; add the salt, vanilla, and egg. Beat until well mixed (about 1 minute).
4. Add flour mixture, mix until almost combined.
5. Stir in the oats and chocolate chips. Chill dough for one hour to overnight.
6. Preheat oven to 375 °F (190 °C).
7. Place golf ball–sized pieces of dough on parchment paper–lined cookie sheet.
8. Bake until cookies are crispy on the edges but still soft in the centre (8 to 10 minutes).
9. Remove from oven and let cool for a few minutes.
