Fresh Herbs Vegan Spread


Ingredients

·          1 cup raw cashews

·          1 clove garlic

·          2 tablespoons coconut oil

·          1 tablespoon lemon juice

·          1 tablespoon apple cider vinegar

·          1 tablespoon of nutritional yeast

·          ½ teaspoon salt (or to taste)


Fresh Herb Mix

·          1 teaspoon fresh oregano finely chopped

·          1 teaspoon fresh parsley

·          1 teaspoon fresh basil

·          1 teaspoon of chives



Instructions

Soak cashews in water for 4 h or place, covered with water, in a small pot and boil for 10–15 min. Drain the cashews and add to a food processor with the other ingredients (except the fresh herb mix). Mix until completely smooth. Add fresh herb mix and pulse to incorporate. Pour into a glass container and refrigerate for 1 h or until ready to serve. Spread on gluten-free whole-grain bread or your favourite crackers.
